sepankizhangu varuval (pan fry)

Sepankizhangu varuval,quick and easy dish. It goes very well with sambar, curd rice, lemon rice etc.,


Sepankizhangu's texture is a bit gooey and get your hands little messed up while peeling and chopping. But the taste is so yumm.

It is belived to be good for our nerves.

INGREDIENTS

Sepankizhangu - 5 to7

Sambar powder - 2 tsp

Oil for shallow fry

Mustard seeds - 1/2 tsp

Curry leaves     - 1 strand
Salt

STEPS:

Wash sepankizhangu and cook in boiling water. You can also pressure cook for 2 whistles.

Check if the sepankizhangu is cooked soft yet firm and skin comes out easily.

Turn off the stove and strain the water. Let it cools down. Peel the skin and chop.


Mix in with sambar powder, salt and little bit of water.
 You can add little oil here in the mixture to avoid siticking to hand.

Let it rest for 5 to 10 minutes.

In a frying pan or dosa tawa add oil, temper it with mustard seeds and curry leaves.

Now add the masala coated sepankizhangu. Cook in a medium flame.
Turn the sepankizhangu in a while.cook for 15 min till it is done. Serve with sambar, curd rice lemon rice.


Tips:

Cook slowly to avoid burning and for crispy ousite and softy middle.
